When I receive emails from addresses that are cell providers, ie. (tel #)@vzwpix.com or (tel#)@mms.att.net, the text is in an attachment that I need to open separately. Is that an issue within Thunderbird settings?

Toggle mail.inline_attachments.text to true in Settings/General/Config. editor.

try view>display attachments inline
