Since the browser engine comes from Apple, if a website starts lagging you'd need to actually downgrade your whole iPadOS, which is something Apple doesn't easily allow on consumer devices.
Are you sure the site issue is only in Firefox for iOS, and does not exhibit in Safari on the same device as well?
(Is a page exhibiting the issues available somewhere publicly for debugging, or it's only available behind authentication? Thanks.)
