How to change email text colour without changing the signature colour?

I've changed my email text colour to blue going through options > Composition > Text colour.

Now, when I write a new email, the signature text displays in the new colour. I would like it to still be black.

I've created my signature as an email > save as > file.

Any advice please? Thank you
