Hi I'm using Thunderbird 91.0b6 (64-bit). The options for customising the calendar is hidden or can easily be found (should be placed where account settings and Thunderbird options are). There is no option for changing the start of the week

There is. At the top right of the Thunderbird window, click the menu button > Options > Calendar > Start the week on: Select the desired day from the drop-down menu

If your OS is Linux or MacOS it's Preferences instead of Options. Hard to guess.

TB 91 changed Options to Preferences on Windows, which is the QO's OS.
