Certainly there will be issues with add-ons that have not been updated. But I am not aware of issues with Lightning. When I check my lightning version it is 68. What is yours?

Lightning v68.0 but I have already downloaded and installed the previous version of Thunderbird (68.0) as I can't wait for a fix to this horrendous update. No issues seen with previous release.

68 and 68.1 are the same and have the same add-on requirements. So perhaps you would like to explain how installing a point release that the developers never really released could have fixed your issue.

My guess is you have installed 60.8 or 60.9. But at some point you will have to update or run the risk of a security breach on your system. So lets actually start talking instead of ranting it is not a horrendous update. It is a progression that has been occurring for years that was forced on Thunderbird by changes to the Firefox shared code. The changes will not be reverted and waiting for it to be fixed will be futile.

One of the well documented things with Thunderbird V68 is that developers of addons must update their add-ons or they will not work. The same occurred with Thunderbird 60 for the same reasons. You also need to be aware that the updated program has to download and install the updated add-ons. Mostly that requires a restart of Thunderbird. Did you do that?
