I have 5 email accounts in Thunderbird. So 5 in-boxes. But when i want to send an email Thunderbird takes as a standard the oldest emailaccount as the sender of the email. I can change that per incident but how can i change it permanently ( a new, another of my emailaccounts as the sending adress) ? Answers preferably in Dutch but English or German might work as well.

TB will apply the account of the currently open folder when you start a new message, i.e. if a folder in account X is open when you click Write, account X will appear in the From box. It's possible to set the From account on a per folder basis with an add-on:
