Filtering email with future dates
I am getting a lot of email dated a month of more in the future. How do I best filter these out as junk? I tried making a regular filter, but can't find a way to set it to "greater than today."

Try the Search Messages feature (see menu item <Edit | Find | Search Messages> or hit Crtl+Shift+F .) There is an Age criteria that accepts negative numbers. I don't have any way to test this, but it's easy enough to try.
If nothing else, you could sort the message list by Date and the "future" ones should land at the top.
If you're getting messages with impossible dates, that indicates something screwy on the sender's end or on some server between them and you. They should be made aware of it!
