Are you just wanting to change the name of the person on the account? If so, click 'account settings', highlight the account name in left side bar, and on right side is the box for 'your name.' Just overtype with your name.

That has my name there for identity,so how does my wifes name show up in the email sent

Something is missing. Puzzling. Can you post a screenshot of account pane that shows name, plus screenshot of the SMTP server settings pane, and maybe a screenshot of a message in the sent or inbox with her name. That should be enough to figure this out. thank you
