where is the sign out button? If it's not there i think it's needed for the purpose of more people using a Pc..

There is no sign out because you did not sign in.
Thunderbird opens when you click on the Thunderbird icon and closes when you exit by either clicking on top right X or File > Exit.
If there are several users using the same computer, they should each have a 'User Account' which you set a password to sign in. This is the standard method used when there are severall users on a computer. Thunderbird keeps the Profile Folder in that User Account. This prevents other users from being able to see each others documents, including Profile folder emails.
