The email address that was used when my Mozilla account was first set up no longer exists, I'm trying to change it but the site keeps sending the confirmation codes to the existing non-existent email address which I no longer have access to. How do I change the email address without losing any data?

Can you add a second email address ?

You can try and get direct ticket support for your Mozilla Account using https://support.mozilla.org/en-US/questions/new/mozilla-account/form
