I have all my emails filed in 50 +/- folders in New Outlook. I would like to transfer/copy them to Thunderbird on a new computer (Windows 11). I have both new outlook and thunderbird set up on old computer (Windows 10).

Just a possibility: Try the tools>import and select the Outlook import. This is a GUESS, as I am not familiar at all with 'New Outlook.' Let me know how it goes.
