Recently when an email is displayed it also includes after the date line all of the following lines:

That sounds like you currently have a setting to display full headers.

Menu app icon (3 lines) > View > Headers > select 'Normal'.

This will then display the basic set eg: FROM, TO, SUBJECT, DATE
