Quick question, is there a button which compacts all folders at once? Either vanilla Thunderbird or an addon will do.

You can right click the Mail Toolbar, the one with Get Mail, and select Customize. There is a Compact Button available there. I am not sure if this is all folders like the Compact command under the File Menu or just the selected folder like Compact under the Right Click menu.
The button is only for single folders
