How do I change the Print Default settings without having to setup alternate presets in the drop down menu?

Somehow my Print Default Setting has changed. For example, the paper size setting has become Legal when I want the Default to always be Letter size; same problem with Black & White (not Color) and Two Sided (not One Sided). I want Letter/B&W/@-sided to be "the" Default Setting - not an alternate Preset that I have to set up and select from the pull down menu each and every time I print. Help! Thanks - Chris
