Matt was kind enough to explain that my IMAP server has restricted my ability to set message retention policies for specific folders. Now I would like to know how to move my mail out of the IMAP account so that I can permanently retain some message types.

You don't necessarily have to leave IMAP. You could download those subfolders you wish to retain permanently to local folders and then delete the online subfolders.
