... and now all my emails, accounts, etc are missing. And I can't seem to find how to load a file with all that info.

Anyone know why this happened, how to prevent it, and more importantly, how to get all my emails and accounts back?!

Did you already try shutting down Windows and restarting again? Occasionally, particularly after system updates, Windows starts up with incomplete permissions. Rebooting once or twice usually sorts it out.
