The PCs would not be used at the same time. (think winter/summer) POP3

I like the idea of reducing the places where the underlying data is potentially exposed.

If all files are synced after any local changes, will this work? Anyone see any potential issues?

Syncing complete profiles on cloud services is generally not supported or recommended (under development). Instead, set up all accounts on all devices as IMAP (to sync mail that is stored on mail server) and add network calendars on all devices either as CalDAV (e.g. Google Calendar) or Exchange ActiveSync (with TbSync add-on).
