I've been able to set up Thunderbird OK on my Mac and have managed to import everything that was in my Outlook Inbox but I haven't been able to import the archived mail in folders from the 'ON MY COMPUTER' section. Is it an easy thing to do?

Not from a mac. I suggest you get one of the PST to EML or MBox converters from the web and import the resultant MBOX/EML files to Thunderbird.
