When I was using Outlook on my PC, (Windows 10, fully up to date) I had the option in the calendar view to show day, week, month or "Next 7 days".

Is it possible to get the "Next 7 days" option in Thunderbird? It simply starts the week view at "Today" on the far left and shows the seven days in the future including today.

The Calendar itself will show current week, next week, month etc and it will always start on the week day as determined in Options. You can set the start day in Options. Adjust some settings for calendar here: Menu icon > Options > Options > Calendar

But this does not offer the Calendar with a Next seven days starting from todays date, unless you keep changing the start day. If you were someone whose working week always started on eg: wednesday, you could alter the display to 'Start the week on: Wednesday'.

However:

The 'Today Pane' will show next 7 days for 'Events', 'Tasks' or 'Events & Tasks' in the form of 'Today', 'Tomorrow' and 'Upcoming (5 days)'.

The 'Tasks' tab will allow you to select 'Next Seven Days' as an option.
