is there a list in Thunderbird where I can enter an address which Thunderbird will unconditionally accept messages from?

No. :-(
In theory, if a sender is listed in your Address Book, the Junk Controls won't ever classify their messages as Junk. In my experience this doesn't always work.
Apart from that, if your messages are being classified as Spam, then something external to Thunderbird is doing this. It may be your own security software, your email provider or ISP, or something like SpamAssassin.
Thunderbird also has "scam detection" which is rather simplistic and unfortunately has no adjustments whatsoever, other than an on/off switch.

Saw that. What happens after a scam is detected? Where do I go to check whether it's turned on or off?
