From time to time some of my emails are converted to what looks like code.

There is no particular pattern as to when it happens or the type of information in the email, some have attachments, some are just text. Where the email contains as image attachment the resulting 'rubbish' can be a very long list.

Can I recover the emails and stop this happening?

Could be folder corruption. Right click the problem folder and select Properties. Then Repair Folder. Be prepared to lose messages if the corruption is too bad.
