I want to be access emails that I have deleted, sometimes months back, but I can't seem to figure out where they go when they disappear from my deleted messages folder. It must be some simple thing that I am missing! Any help will be appreciated.

First step is to stop using the Trash for messages you want to keep. Make a new folder and name it Keepers or something other than Trash and move these messages there.

When you delete a single message in any folder it is marked as (to be) deleted. Depending on your account-settings it is also copied into Trash. (The "Deleted message folder")

From Trash you can move a message anywhere. With an add-on you can undelete messages in any folder.

But if you empty "Trash" the entire folder is replaced with a new empty one. Then there is nothing to move. (or undelete)

If you compact a folder all mails not marked as deleted will be rewritten into a new empty folder. Then there is nothing to undelete.
