In Options\Warning Messages\Settings, what distinguishes low-grade encryption from just encryption? Why is low-grade the only default? I don't know much about encryption, but I want to set these messages the best way for me.

Low-grade is really low-grade (less than 128 bit) and should never be used anymore.
In current Firefox versions all low-grade (SSL2 and SSL3) encryption ciphers are disabled as you can see on theabout:config page (Filter: ssl).
So leave that low-grade warning at the default.
