Whenever I view a page in the browser, I used to be able to go to the vIEW menu and select source, and a new window would display the html / javascript/ ... that was being rendered in the browser. Now I no longer see that option. Has it been moved to another menu? Has it been renamed? Has it been placed at a different level?

It's in the Web Developer sub-menu now, along with the Context menu - View Page Source.

You can also right-click on a web page to open the right-click context menu and select Page Source.
