I all too frequently receive emails where the text is not constrained to the current message window. Sometimes it looks like I've received a blank message until I scroll to the right and to continue reading one line I have to scroll across the window. Is there a way to reflow incomming messages so that they fit the window?

There are many reasons for the issues you are seeing, but mostly is it apple mail programs using apple text formatting that is non standard.

There are also mailers that wrap the entire message body in a table element that forces the display to the size of the senders display not yours.

AT exact reason most depends on the mail and stopping it is actually very difficult. However Thunderbird does have more than one way to view messages. Use the view menu under view me3ssage body as when you have the message open and have a try of simple HTML and Plain text modes. (plain text should wrap at 80 columns like an old IBM 3270 mainframe terminal from the 1970s.if the sender actually included a plain text version and it does not have to be emulated.
