How do I rename a tab in firefox. I did one yesterday, but when I updated my OS to El Capitan on my mac, I cant find the options any longer.

Firefox has no builtin way to change the tab title. The title of the tab is determined by the <title>...</title> element in the website's HTML code.
You can change the tab title using the Rename Tab Title addon.

as I understand it, this only changes it for the session. So if you log out, then back in, it reverts back, correct. Now I did change one the other day, but I can't find the option to do it since I upgraded my operating system, so I'm kinda at a loss.
I apologize, but there is no Firefox feature that does what you are looking for. I'm not sure how you were able to change the tab title previously.
Perhaps it was a feature on your operating system that was removed in the upgrade or a third party program that you had installed on your system and no longer have.
I was not able to find any other addon that would have this feature. There are many addons, so you are welcome to take a look for yourself here.

I see in the System Detail list that you use a rather old Firefox 14.0.1 version.
Is there any specific reason why you still use this old Firefox version?
If there a problem with updating or with the permissions then best is to download the full version and trash the currently installed version to do a clean install of the new version.
Download a new copy of the Firefox application and save the disk image file to the desktop

- Trash the current Firefox application (open the Applications folder in the Finder and drag the Firefox application to the Trash) to do a clean (re)install
- Install the new version that you have downloaded

Your personal data like bookmarks is stored in the Firefox profile folder, so you won't lose personal data when you uninstall and (re)install or update Firefox, but make sure NOT to remove personal data when you uninstall Firefox as that will remove all Firefox profile folders and you lose your personal data.
didn't realize that. I just started using the mac side of this computer so I'll try updating now
Show I am on automatic updated and currently on version 39 installed on July 31, 15. The 14.01 was the original installation. However, it is also showing that the update server could not be found, so I am at a loss. One hand tells me I am updated, the other says cant find the server,
The most recent version of Firefox is version 42.0. Please try downloading the installer for version 42.0 from the Mozilla website.
