I have 3 email accounts that normally all display. Suddenly the inbox of only one account displays, can't find how to get back all folders on all accounts

You haven't given us much to go on here.
Do you see a tall thin panel at the left that lists your accounts and all their folders?
In the traditional menu, View|Layout|Folder Pane should re-enable it.
When you have this pane, you should be able to scroll it and browse for any of your accounts or folders.
