No 'Header' option under the 'View' menu - want to remove full header from email when forwarding

Suddenly my forwarded emails display the full header - I must have changed to this format but cannot see how as the View tab does not display the Header option! Is there some other way to change this option back to no Header? I am using Thunderbird for Mac. Would appreciate any help you can give...
