Is th is not a an existing feature? All I know to do now is put emails in alphabetical order and look for the name. Surely I am just not finding a way to do it

Thunderbird has at least three search tools built in.

  1. At the top is the Global Search, which looks everywhere with a very loose match and will probably get you an overwhelming list of possible near misses. https://support.mozilla.org/en-US/kb/global-search
  2. Ctrl+shift+f will give you a more precise search where you can set specific search parameters, but this search is restricted to the current folder.
  3. The QuickFilter bar, just below the Global Search box lets you filter the current folder. If you type in some text, a set of buttons appear, allowing you to give the context, "from" being one of these.

A Saved Search, which is admittedly more work to set up, will let you search anywhere but using the precise search definition used in (2). https://support.mozilla.org/en-US/kb/using-saved-searches

I use an addon, Expression Search/GmailUI to enhance the QuickFilter bar with more precise search capabilities. It also allows you to expand a simple search of the current folder to the Global Search tool.
