I'm using Mac OS 10.9. My default language in preferences is English but for some reason the spell check defaults to Spanish. I have never added on a dictionary. I can change it on an individual page basis by right clicking but that's an annoyance that should not be required. All of the articles I've read seemed to refer to Linux systems. There should be a simple option in preferences to address this issue but I can't find any reference to such.
