Suckered into update I don't want!
Firefox has been putting that "update" thing in the right upper corner 10 times a day,knowing darn well that someday I'll click on the wrong button. Well, sure enough, I clicked on the "update" instead of the other option and now I'm stuck with this new version that I just don't like. I don't even know what the previous version I had was! Does anyone know what was the last version before this major change? I want it back!

Older versions of Firefox are always available, but not recommended. See: Install an older version of Firefox.
Could you list the things you don't like about version 89-90 (as the case may be) to see whether we can suggest a workaround?

Type about:support in the address bar and press enter. Look for Update History.
I understand the need for updates for security reasons, but why do you have to change the way things look? No one likes change forced upon them. Lets talk about that constant reminder to update, that pops up in the upper right corner. You know that after a few hundred times of that popping up, everyone will eventually hit the wrong response and BOOM, you get an update you didn't want. At least you could have the courtesy to have the opportunity to change your mind with a simple "are you sure?" button. But NOOO! As soon as I hit the wrong button, I tried to get out of it by immediately closing Firefox, but it was too late.

Remember the nice rounded tabs Firefox used to have? It actually look like a real tab that would be found in most office filing cabinets. Then they went to the boring square tabs. Now the tabs are this bright white that just "shout" at you. I've already gone back to version 88, so I can't really look to see other issues, but that was enough to get my blood boiling. I can't be the only one that feels this way.
Okay, so #1 is the color scheme for tabs/the toolbar area. If the built-in themes do not work for you, you could install an add-on theme or use the Firefox Color extension to create your own color scheme.

Regarding tab shape, you can modify that using the community-supported (i.e., unofficial) method of creating a userChrome.css file. I have an example of how to reconnect your tabs in Firefox 89-90 on my page here:
