cannot just click on bc and add name. have to do it manually now

I cannot follow what you're doing, and how 'cannot just click on bc' is related to 'my contact list disappeared'.

when trying to forward an email I usually can send bc or cc by just clicking on the recipients name. Now the contact list does not appear when trying to forward something. If I manually open the contacts folder I have to start typing the name of the recipient rather than just click on their name.

I don't think I understand your problem. As opposed to replying to a message, when forwarding a message, you'll have to specify the recipient(s) regardless. There is no way around that.
