How do I set up a folder to recieve emails from a certain sender?
Also how do I rearrange the order of the folders?

As far as I know, all incoming messages go to your inbox. You can have multiple e-mail addresses and a separate inbox for each address.
What you can do is use the tools menu to find message filters. In the filters you can set up a rule that diverts any incoming e-mail to a specific folder.
I do this with a lot of regular spam.
