I cannot launch Lightning. "Calendar" & "Tasks" are greyed out in the view menu.

You do not open Lightning from the View Menu. You open it from the Events & Tasks menu and then Calendar.

The shortcut is Control+Shift+C

The Calendar selection under View is to set options when you have the calendar open.
