How can I get the name of the person and their e-mail address to show up when sending an e-mail. Some of my contacts the info does show up for and others it does not.

Try the various settings in settings>general, as this is a recent update.
Already tried the various settings in general. In the old version when you added a contact there was a check box to show display name with the email. In the new version you don't have that option.
Please revisit settings (attached), as one of them may work.
