why does this preference still work..?
the preference "browser.contentblocking.category" does still work although it isn't existing in the about:config settings anymore(was removed as it seems) but how and why does it still work?

I see browser.contentblocking.category with value standard in a new profile. It's a dynamic setting so it won't appear if it is unmodified or not created. There are many hidden settings that do not appear in about:config.
