The colors on my Windows desktop got changed. I am not sure how except that after I watched a video on YouTube , I suddenly had two red bars one at the top and one at the bottom. I was able to fix the problem in Windows 10 and my desktop is now normal.

Here is my question. When I went back into FF after fiddling with the Windows DT, I found that I had white text on a black background instead of black text on white background. I tried fixing this in options I have just double checked and sure enough the options say text black background white, but they are still switched on my screen

Firefox adapts to system themes to some extent.

If you are noticing white-on-black in the toolbar area, you can switch from the Default them to the Light theme. More info: Built-in themes in Firefox - alternative to complete themes.

If you are noticing white-on-black in the tab content area on certain built-in Firefox pages, you can manually override the dark system theme detection as follows:

(A) In a new tab, type or paste about:config in the address bar and press Enter/Return. Click the button accepting the risk.

(B) In the search box, type or paste ui.systemUsesDarkTheme

(C) Firefox should display a bar with some radio buttons to choose a new preference type, followed by a + button. Choose Number and click the + button:

(D) Edit the value to either 0 (Light) or 1 (Dark) and then click the blue check mark button or press Enter/Return to save the change.

Any difference?
