In GoogleDoc Sharing Dialog; Adding invitees , 1) after typing the first character of email address, dropdown pop up

2) click on the select item would not get the eMail address, but an x

It sounds like you may be auto completing before you finish typing.

Are you hitting your track pad while you start to type in the name?

Try this: Begin to type the name, and when the name appears, use the down arrow key and hit enter

If the hot keys work, I wonder if there is an add on or javascript that is corrupt.

  Keyboard Down/ Up/ Cleck did the trick.
   Mouse Hovering over/click won't do.
       
     Changed since late 2017.  Mystery solved.
