I'm not staying on Firefox after the TOS update and I would like to submit a GDRP erasure order to Mozilla. what email would be appropriate to send that to. or even better a way to opt out of the TOS and have whatever data was already collected/sold removed from all party's servers.

There is no email and this is just a user help page so no one here can tell you that. Why not look at your privacy settings and make the changes there as well? Every browser will eventually use AI to do all this task Firefox isn't excluded from this.
