I was wondering if it is at all possible to customise a theme for Thunderbird OR use a customised theme for Thunderbird. Does anyone have any tips or advice on how to go about either of the above?

There are very few theme add-ons for TB 68, so the best option for customizing the interface is to apply a userChrome.css file. You can modify as many or as few items as you like; see this topic for examples.
