When opening Thunderbird, my list of folders is on the left and the message list is on the right. The messages are underneath the list of messages.

I hate this. Seriously.

I want to be able to see a list of my messages in a center column and the message that is selected in a column on the right.

Is this possible?

It is in the menu:

View|Layout|Vertical View

So, if you need to ask, I guess you can't see a menu.

Press alt or F10 to make the main menu appear. If you want it to stay visible, go to View|Toolbars and tick the checkboxes.

In the Application Menu, it's under Options|Layout. Hover, don't click, until the classic/wide/vertical options appear.

Many of my messages are big fat wide HTML formatted documents. How can you abide these in a narrow view?
