How can I add another family member to thunderbird and create a different email address for him?

Thunderbird is not an email provider. You need to establish an email address with a provider like gmail, yahoo or your ISP. Then add the account to Thunderbird by going to File-New-Existing Mail Account.

The first thing you need to do is get a new email account from your ISP or from a third party such as Google (or many others). You could also look into https://support.mozilla.org/en-US/kb/new-email-address

Once you have the email account, you need to tell Thunderbird about it. See https://support.mozilla.org/en-US/kb/automatic-account-configuration
