I went to the options window and on the update tab the check for updates section was grayed out.
I want to select "never check for updates" but I can't.

What version are you currently using?
A possible cause might be that you do not have write permissions for the Firefox program folder to install updates.
On Windows updates are usually downloaded and installed via a special service that runs in the background and that has elevated permissions (you need to approve this once during the first installation of Firefox).
You may only be able to check for updates when Firefox is started as Administrator (not recommended for security reasons).
You can see the current Firefox version in Help > About and visiting this window should show a message when updates are available.
