I do not use Sync, but on the Terms of Service page ( https://services.mozilla.com/tos/ ) about 2/3 of the way down the page is a section "Canceling the Services" that explains the procedure. You will need the e-mail or user name and password that you supplied when setting up the Sync account to complete the removal of data on the server.
