Hello, around Firefox 84, Preview, Page Setup, and Print were merged into a new print experience under the Print menu item. Can you check the right column of the Print overlay to see whether the settings you are looking for are shown there?

Need also those attached page setup

The new print experience includes all of those settings in your two screenshots EXCEPT changing the content of headers and footers.

There is no setting for that in about:config. You can select whether to update automatically or be notified of updates on the Settings page (formerly called the Options or Preferences page). This is an old screenshot but it still looks roughly the same. The setting is saved in an external file, not in your currently active profile folder.
