If it applies only to the active one it would be possible to check out the new version and if it has undesirable features either not use it or save an extra copy of the current profile and try to import certain files from that to the new version.

Generally, there's only one copy of Firefox installed. It doesn't matter which profile you use to update it. So yes, an update applies to all profiles.

You can use Firefox Portable if you want to check out a particular version without affecting your other profiles.
