I used the wrong email to sign up for Mozilla VPN and paid already. I thought I was creating the email, but that was not the case. What can I do to change the email?

You will have to contact us directly via the VPN app and fill in a support form. The ticket will be sent to us with the email address you have subscribed with, then we can cancel and issue you a refund and you will be able to sign up with the correct email address.
