why do some sites show up very small and unreadable?

Try to reset the percentage of the view by pressing Ctrl + 0
You may have zoomed the page(s) by accident.
Reset the page zoom on pages that cause problems.
- View > Zoom > Reset (Ctrl/Command+0 (zero))

NoSquint allows you to adjust the text-only and full-page (both text and images) zoom levels as well as color settings both globally (for all sites) and per site.
