the fact that google is now the default browser in firefox quantum really pisses me off. does firefox still care about prvacy? the new quantum messed up firefox. can i still brwse privately? are any privacy policies changed?

Yes they do! To change your default search engine, type in about:preferences, click on the Search tab, and then change it to DuckDuckGo -- this search engine does not track you.

To open a private window: Click on the menu >> then click Open New Private Window.

For the Privacy Policy: https://www.mozilla.org/en-US/privacy/firefox/
