Is there any way to un-do Sync?
I don't know exactly where I went wrong, but I've really messed up.
Setting up a new Windows PC, installed Firefox no problem, ran Sync no problem, all bookmarks etc. showed up from primary machine. Cleared a bunch of bookmark folders not needed on the new machine, and when I went back to the primary machine, all those folders had also disappeared from it! ARRRGGGHHHH!!! Went to our third machine (the one the new one is replacing) and all those changes had impacted it, too! NOOOOOO!!!! This all seemed to happen in real-time. Is there anything I can do to get back all that stuff?
PS I've just updated Firefox since this happened. Probably shouldn't have.

Firefox keeps 10 JSON backups in the bookmarkbackups folder, so you should be able to restore those lost bookmarks if it happened less than 10 days ago.
- Bookmarks > Show All Bookmarks > Import & Backup > Restore > Choose File
Best would be to unlink from Sync when doing this restore.
